Ok ur all gonna laugh but of all the things I bake and fry and cook Chicken
has always been something I have not been able to do. I would either get them done
in the middle and burnt outside, or just right outside and not done inside.
I even tried making them in a wok lol. Well finally I decided “Hey u always boil
chicken before u BBQ them so why not Boil them and then dip in the mixture ur using and fry
in the skillet. It worked and I have awesome juicy chicken .. White and juicy
on the inside and perfectly crisp and brown on the out. Yumm. Yay me..
Anyway here is the recipes
Red Potatoes (peeled and quartered)
Laughing Cow swiss cheese
salt n pepper to taste (I used greek & Lowreys Season all)
In a a pot boil Taters
In another pot boil Chicken
Bout the time the taters are done and ready to mash the chicken will be done to
(to know if chicken is done just look, if its got alot of white foam on top
of water and the chicken is looking tan not pink its done)
Taters are done when u can take a fork in one and it crumbles.
In electric skillet put canola oil. Heat to 300*
Mix ur egg and milk together in a bowl throw ur cut up zucchini in it to soak
in another bowl mix ur flour and bread crumbs and seasoning.
Dredge ur zucchini in dry mix then fry in skillet. About 5 min ea. side then 4-5 one more time on first side.
Then take ur boiled Chicken and soak in the egg/milk mix and then dredge in the dry mix
and then fry. About 5 min ea. side. Should be nice and brown and crisp.
Then with a hand mixer mix milk, butter, cheese and taters together till creamy.
Then serve.. Yummmmmy..
