Taco Soup

2 cans of corn (I do 1 white, 1 yellow)

2 cans diced tomato

2 lbs ground beef

2 cans of red beans (I do one light red, 1 dark red)

2 packs dry Ranch Dressing

2 packs Taco seasoning mix


Sour cream

Dorito Nacho Chips (gotta be Nacho flavor, trust me)

Shredded Cheddar Cheese

Brown and drain ground beef. Pour all soup ingredients into a crock pot draining the water from veggies (except tomato). Stir to dissolve the dressing and seasoning mix.

Cover and cook until bubbly (about 2 hours on high, then turn to low to keep warm)

Serve in a bowl, then drop in a handful of cheese, and another of chips that you crush in your hands over the soup. Add a dollop of sour cream and stand back and accept the ooo’s and aaaah’s.

Note: the consistency is more of a stew than a soup.

Hint: This taste soo much better the next day because all the seasoning gets to permeate the foods. YUM.

Second hint: I make a double dose in a soup pot on the stove in the winter and freeze bowl size portions in baggies. When I want something warm, I grab a baggie, microwave, and eat. Its comfy food.
